- 24 half shell Greenshell mussels
- 3/4 cup Kewpie mayonnaise (Japanese mayonnaise)
- 1 teaspoon sriracha (chilli sauce)
- 1 tablespoon flying fish roe

Method
- Preheat Broiler/Grill:
- Pre-heat your broiler/grill to 180 °C / 350 °F.
- Prepare Dynamite Sauce:
- In a bowl, combine Kewpie mayonnaise and sriracha. Taste and adjust the spice level by adding more sriracha for heat or more Kewpie mayo for a milder flavor.
- Add flying fish roe to the sauce and stir slowly to distribute evenly.
- Sauce the Mussels:
- Place the half shell Greenshell mussels on a baking tray.
- Spoon the Dynamite Sauce:
- Spoon the prepared Dynamite Sauce over each mussel, ensuring the meat is completely covered.
- Broil/Grill the Mussels:
- Put the tray of mussels under the preheated broiler/grill.
- Check frequently and rotate the tray occasionally to ensure even browning and compensate for hot spots.
- Cook Until Golden Brown:
- Cook until the sauce bubbles and turns golden brown with a few dark spots forming. The total cooking time should not exceed 15 minutes.
- Serve Immediately:
- Once the mussels are cooked, remove them from the broiler/grill.
- Serve immediately while hot and bursting with flavor.

- Garnish with additional flying fish roe or chopped fresh herbs for an extra burst of color and texture.
