Garlic & Cheddar Grilled Mussels

Ingredients

  • 1.5 kg live mussels
  • 1 clove garlic, roasted
  • 1/2 cup red onion, finely diced
  • 1/2 cup sweet chili sauce
  • 1/2 cup grated cheddar cheese
  • 180g butter, softened
  • 1/2 cup breadcrumbs
  • 2 tsp parsley, chopped
  • 1/2 tsp salt

Method

  1. Prepare the Mussels:
    • Clean and debeard the live mussels.
    • Lightly steam the mussels until they open, and remove the top shell. Set aside.
  2. Prepare the Topping:
    • In a bowl, combine the roasted garlic, finely diced red onion, sweet chili sauce, grated cheddar cheese, softened butter, breadcrumbs, chopped parsley, and salt. Mix well until all ingredients are evenly incorporated.
  3. Assemble the Mussels:
    • Preheat the grill to medium-high heat.
    • Place the steamed mussels, still in the half shell, on a baking tray.
  4. Top with Mixture:
    • Spoon a generous portion of the prepared topping onto each mussel, ensuring an even distribution.
  5. Grill the Mussels:
    • Carefully place the tray of mussels under the preheated grill.
    • Grill until the topping turns golden brown, keeping a close eye to prevent burning, as the browning can happen quickly.
  6. Serve and Enjoy:
    • Once the topping is golden and bubbly, remove the tray from the grill.
    • Allow the mussels to cool slightly before serving.

Tips:

  • Serve the garlic and cheddar grilled mussels with lemon wedges for a citrusy touch.
  • Garnish with additional chopped parsley for a fresh, vibrant finish.
