Ingredients
- 1.5 kg live mussels
 - 1 clove garlic, roasted
 - 1/2 cup red onion, finely diced
 - 1/2 cup sweet chili sauce
 - 1/2 cup grated cheddar cheese
 - 180g butter, softened
 - 1/2 cup breadcrumbs
 - 2 tsp parsley, chopped
 - 1/2 tsp salt

Method
- Prepare the Mussels:
- Clean and debeard the live mussels.
 - Lightly steam the mussels until they open, and remove the top shell. Set aside.
 
 - Prepare the Topping:
- In a bowl, combine the roasted garlic, finely diced red onion, sweet chili sauce, grated cheddar cheese, softened butter, breadcrumbs, chopped parsley, and salt. Mix well until all ingredients are evenly incorporated.
 
 - Assemble the Mussels:
- Preheat the grill to medium-high heat.
 - Place the steamed mussels, still in the half shell, on a baking tray.
 
 - Top with Mixture:
- Spoon a generous portion of the prepared topping onto each mussel, ensuring an even distribution.
 
 - Grill the Mussels:
- Carefully place the tray of mussels under the preheated grill.
 - Grill until the topping turns golden brown, keeping a close eye to prevent burning, as the browning can happen quickly.
 
 - Serve and Enjoy:
- Once the topping is golden and bubbly, remove the tray from the grill.
 - Allow the mussels to cool slightly before serving.
